After the great cold, we begin to prepare the garden. for some years we have been experimenting with this practice which, every time, leaves us with surprises. The soil, the weather, the seeds, the bees ... while planning, there is always an amount of incognita that makes us sad in front of a dead seedling and happy as children in eating our sweet tomatoes... As soon as the harvest is over, we bring the flowers to our lab where, one by one, we open them to separate the stigmas and dry them. This is the part of the crocus that becomes the spice called saffron. the work is completely manual and requires a lot of attention, delicacy and no delay in time; every day we must complete what has begun... We are a small farm on the Parma Apennines (MAB Unesco): we grow lavender and saffron of the highest quality.
