A. WALLACE HAYES

Dr. Hayes is a toxicologist with experience in industry and academics. He holds appointments at Harvard University as a Visiting Scientist and the School of Public Health, University of Massachusetts, Amherst as a Research Professor, Michigan State University as an adjunct Professor and as a Senior Science Advisor to Spherix Consulting. Previously, Dr. Hayes held the position of Vice President and Corporate Toxicologist for RJR Nabisco with responsibility for all regulatory and toxicology issues related to the safety of ingredients and food contact substances for food and drink products worldwide. Subsequently, as Corporate Vice-President of Product Integrity at the Gillette Company, he had management responsibility for the safety evaluation and regulatory compliance of a variety of consumer products, plant safety, environmental stewardship, and quality control. Dr. Hayes has served on numerous committees and expert panels for the National Academy of Sciences, the National Institutes of Health, the Food and Drug Administration, the Environmental Protection Agency and the Department of Defense. Dr Hayes is currently a member of the Food Advisor Committee, US Food and Drug Administration and Food Quality Protection Act Science Review Board, US EPA. Dr. Hayes has served on a number of GRAS Expert Panels. Dr. Hayes has authored more than 250 peer reviewed publications, is the coeditor of Hayes' Principles and Methods of Toxicology, 6th Edition, Editor for the Americas, Human and Experimental Toxicology, Editor in Chief, Cutaneous and Ocular Toxicology and co-editor of the Target Organ Toxicity Series. Dr. Hayes was the Editor-in-Chief, Food and Chemical Toxicology. Dr. Hayes is a past Secretary-General of IUTOX (two terms), past treasurer and board member of the American Board of Toxicology, a past president of the American College of Toxicology, the Toxicology Education Foundation, and the Academy of Toxicological Sciences and a past member of the council of the Society of Toxicology. Catherine (Cathy) Clemens - Founder, President

Catherine (Cathy) Clemens, president and co-founder of Polyscience Consulting, is a clinical microbiologist with more than 50 years of experience. Cathy is a licensed medical technologist, and active member in the American Society for Clinical Pathology. She shares a vision with her husband, Dr. Roger Clemens, to educate the public on practical applications of science, particularly with emerging challenges in microbiology. One of her favorite mottos is "seek to understand," which she invokes in her work with patients, health care providers and in women's ministries.

Dr. Roger A. Clemens is co-founder and executive vice president of PolyScience Consulting. He is part-time faculty within the USC International Center for Regulatory Science program where he enjoys an adjunct appointment as Professor of Pharmacology and Pharmaceutical Sciences within the USC School of Pharmacy. He also developed and facilitates graduate courses in the Global Medicine program within the USC School of Medicine. He served as Scientific Advisor for Nestlé USA for more than 21 years and then consultant to and Chief Scientific Officer for Horn for about a decade. Dr. Clemens has published more than 50 original manuscripts in nutrition and food science, participated in more than 300 invited domestic and international lectures, and served as an expert panel member for the food industry, scientific organizations, trade associations and regulatory agencies in the United States, Canada and Europe. Dr. Clemens is a past president of the Institute of Food Technologists (IFT) and former member of the IFT Board of Directors. He served on numerous IFT expert panels, including Functional Foods, and Making Decisions about the Risks of Chemicals in Foods with Limited Scientific Information. He co-founded, established and contributes to a Food, Medicine and Health column published monthly in Food Technology since 2004. As a spokesperson for IFT, Dr. Clemens has been cited and interviewed by more than 500 domestic and international health journalists, and has appeared on numerous televised discussions on contemporary health, nutrition and food safety issues. In 2017, Dr. Clemens will launch a new column in Nutrition Today that addresses the regulatory status, safety, and functional properties of food ingredients. Dr. Clemens continues to serve as a spokesperson on food, nutrition and health issues for the American Society for Nutrition (ASN). He chaired the Public Information Committee, served as a member of ASN's Finance Committee, ASN's Medical Nutrition Council, and ASN's Membership Committee. Dr. Clemens was a member of the USDA 2010 Dietary Guidelines Advisory Committee, and is a third-term member of the US Pharmacopeia Food Ingredient Expert Committee. Dr. Clemens, a Certified Food Scientist, is a professional member of and Fellow in IFT. Dr. Clemens received many awards for his leadership in IFT, the Academy of Nutrition and Dietetics, and in local universities. He is a Fellow in the American College of Nutrition, a Fellow in the International Academy of Food Science and Technology, and a Fellow in the Marilyn Magaram Center for Food Science, Nutrition and Dietetics. He is an active member in the Society of Toxicology and the American College of Toxicology. He is an associate editor of the Journal of Food Science, and an editorial board member for Food Chemical Toxicology and Nature Partner Journal Science of Food. Dr. Clemens received an AB in Bacteriology, a MPH in Nutrition, and a DrPH in Public Health Nutrition and Biological Chemistry from the University of California, Los Angeles.

Peter Pressman

Peter Pressman, MD, MS, FACN is Vice President, Medicine Public Health & Nutrition at The Daedalus Foundation, Alexandria, Virginia, and Director of Medical Operations at PolyScience Consulting in Chatsworth, California. Dr. Pressman has been continuously active in both internal medicine and surgical education, focusing on special topics in nutritional support. Dr. Pressman is a reviewer for the Journal of Food Science, the Journal of Food & Chemical Toxicology, and serves on the Editorial Board of Toxicology Research and Application. Through Summer of 2016, Pressman was the Aspire Food Group Visiting Scientist in the Horch Neuroscience Laboratory at Bowdoin College in Brunswick, ME. Dr. Pressman recently submitted a U.S. Provisional Patent (Application No. 62/408,969) involving processes for extracting chitin and chitosan from insect flour, and for preparing both hydrogel and solid forms of the material for use in tissue engineering applications. Dr. Pressman currently serves on the Food Additive Task Force of the International Special Dietary Foods Industries (ISDFI) along with distinguished scientists representing the European Union and from the Chan School of Public Health, Harvard University. The task force is developing and publishing a science driven framework for the safety assessment of technologically justified food additives during early life. Dr. Pressman, during his affiliation with The Daedalus Foundation, was instrumental in designing and coordinating healthcare services and product development in support of civil (medical) preparedness, rapid response and daily health requirements of those struggling with natural or manmade disasters. In process now is GeoHealth© a global cloudbased, cell phone enabled system for early detection and tracking of communicable disease blooms such as those associated with Ebola virus, MERS Corona virus, and Zika virus. At PolyScience Consulting, Dr. Pressman is responsible for provision of clinical medical expertise in the multidisciplinary solution of applied biotechnology and medical nutrition challenges brought by clients. PolyScience is conceived as a center of excellence for medical nutrition, toxicology, integrative medicine, public health, and therapeutics. A focus on advocacy for underserved and imperiled populations both domestically and in the developing world is paramount in client recruitment and project initiatives. Responsibilities include but are not limited to research evaluation, process design, coordination among investigators, public education and outreach, and media relations. Dr. Pressman is a graduate of Bowdoin College, the University of Chicago, and Northwestern University Medical School. He received additional medical training at the University of Wisconsin and Rush Presbyterian St. Lukes Medical Center. After serving as Assistant Professor of Medicine, Director of Educational Programs of the Pacific Center for Health Policy & Ethics, and Associate Director of the Internal Medicine Residency Program, all at University of Southern California/Keck School of Medicine, he attended at Cedars Sinai Medical Center in Los Angeles. Dr. Pressman, feeling the calling to serve his country as a physician, he was later deployed in the Developing World as a Naval Medical Officer.

Polly Earl

Dr. Earl has been an educator for 40 years, working primarily with children from birth to 22 who are deaf and hard of hearing. During her years in Idaho, Maine, Hawaii, Texas, and Ohio as a speech therapist, teacher, special education consultant, and professor she enjoyed exposure to different cultures, dialects, and languages providing a deeper appreciation of the complexities of language acquisition and production in children and adults. Dr. Earl studied Speech Pathology and Audiology at Idaho State University where she had her first in-depth exposure to using communication through the air. Her Master's thesis from Texas Woman's University in Deaf Education focused on a case study of a Deaf man with a right hemisphere lesion resulting in visual-spatial impairments and no marked deficits in his ability to use American sign language. Dr. Earl pursued her fascination with deafness and language acquisition during her Doctoral study in Special Education at the University of Cincinnati, writing her dissertation on the effects of using cued Dutch and cued Spanish for bilingual language access for a baby with auditory neuropathy spectrum disorder. As adjunct faculty at the University of Maine, Dr. Earl enjoyed teaching courses in the Teacher Education department in Reading Strategies and Interventions, Language Development in the Exceptional Learner, and American Sign Language. As a Certified Instructor of Cued Speech and Teacher of the Deaf, Dr. Earl has presented nationally and internationally on the benefits of using Cued Speech with children and adults to provide visual access to the spoken language(s) of their home and therefore facilitating age appropriate language and literacy development. Dr. Earl supports the study and use of both Cued Speech and American Sign Language (ASL) with children and adults who are deaf to provide clear and consistent visual access to languages. Her most recent interests focus on how mirror neurons interact with the language areas of the brain to facilitate visual processing of cued languages in babies.
